This 7-day cycle menu offers a specific pattern of meal components and provides variety to a population who routinely eat within the establishment. This menu is practical, appealing, and follows standard cycle menu guidelines such as restriction on repetition and diversity in color, texture and flavor.

Supplement Evaluation Paper. ​

Nutrition 417 Human Nutrition Science

This paper evaluates the macronutrient supplement of L-Carnitine and its effect on weight loss. I conducted extensive research of peer reviewed studies, evaluated studies provided by the supplement providers, and compared the supplement form with food sources.

Evaluation of WIC. ​

Nutrition 423 Community Nutrition

​This assignment was an evaluation of a local WIC clinic. After review of background information such as funding and target audience, a suggested change was made and purposed with a logic model.

Foodservice Policy. ​

Nutrition 446 Managing Food and Nutrition services

​This is an in-depth and detailed policy on employee hygiene for a food service operation.  The objective was to write a policy that communicates industry standards as well as other necessary requirements that set the procedure for both employer and employee to follow

Consumer Paper on a Controversial Issue. ​

Nutrition 439 Communication in Dietetics

This paper communicates scientific research on the controversial topic of a vegetarian diet preventing heart disease. The goal was to communicate evidenced based recommendations by highlighting key messages and write at an 8th grade level.
